Ingredients

- 1/2 cup water
- 1 cup fresh or frozen blueberries
- Zest of 1 medium lemon

- 2 oz light rum
- 1 oz freshly squeezed lemon juice
- 3/4 oz prepared simple syrup
- Fresh blueberries for garnish
- Lemon peel for garnish
Instructions
- In a saucepan over medium heat, combine sugar and water. Stir until dissolved.
- Add blueberries and bring to a boil. Let them burst and simmer for 5 minutes.
- Remove from heat, stir in lemon zest, and let cool for 10 minutes.
- Strain syrup through a mesh sieve into a jar or bowl and let it cool completely.
- Fill a cocktail shaker with ice. Add light rum, lemon juice, and simple syrup.
- Shake until chilled, about 15 seconds.
- Strain into a chilled coupe glass.
- Garnish with fresh blueberries and lemon peel.
