  • 50 grams (1/4 cup) granulated sugar (for blueberries)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice (for blueberries)
  • 150 grams (1 1/2 cups) rolled oats
  • 100 grams (3/4 cup) all-purpose flour
  • 100 grams (1/2 cup) brown sugar
  • 115 grams (1/2 cup) unsalted butter (melted)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted butter, cinnamon, and salt until crumbly. Press half into the bottom of a 9-inch springform pan.
  3. Beat softened cream cheese until smooth, then gradually add granulated sugar. Mix in sour cream, eggs, vanilla extract, and lemon juice until just combined.
  4. In a saucepan, cook blueberries, granulated sugar, cornstarch, and lemon juice over medium heat for 5-7 minutes until thickened. Let cool.
  5. Pour cheesecake filling over the crust, then spoon the blueberry mixture on top.
  6. Sprinkle reserved crumble mixture over the blueberry layer.
  7. Bake for 50-60 minutes until edges are set and center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
  8. Let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
