- 240 ml (1 cup) sour cream

- 300 grams (2 cups) fresh blueberries
- 50 grams (1/4 cup) granulated sugar (for blueberries)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice (for blueberries)
- 150 grams (1 1/2 cups) rolled oats
- 100 grams (3/4 cup) all-purpose flour
- 100 grams (1/2 cup) brown sugar
- 115 grams (1/2 cup) unsalted butter (melted)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 175°C (350°F).
- In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted butter, cinnamon, and salt until crumbly. Press half into the bottom of a 9-inch springform pan.
- Beat softened cream cheese until smooth, then gradually add granulated sugar. Mix in sour cream, eggs, vanilla extract, and lemon juice until just combined.
- In a saucepan, cook blueberries, granulated sugar, cornstarch, and lemon juice over medium heat for 5-7 minutes until thickened. Let cool.
- Pour cheesecake filling over the crust, then spoon the blueberry mixture on top.
- Sprinkle reserved crumble mixture over the blueberry layer.
- Bake for 50-60 minutes until edges are set and center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- Let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
