- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar (packed)
- 1/2 cup butter (melted)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups fresh blueberries (or frozen)
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish or line with parchment paper.
- In a large bowl, combine flour, oats, brown sugar, melted butter, baking soda, salt, and cinnamon. Mix until crumbly.
- Press two-thirds of the crumb mixture evenly into the prepared baking dish to form the crust.
- In another bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss to coat evenly.
- Spread the blueberry filling over the crust. Sprinkle the remaining crumble mixture over the top.
- Bake for 35-40 minutes or until golden brown and bubbly. Let cool for 20-30 minutes before cutting into squares.
- Serve warm or at room temperature.
Notes
- For a dairy-free version, substitute butter with coconut oil or vegetable oil.
- Fresh blueberries yield the best flavor, but frozen works too if thawed and drained.
- These bars can be made ahead of time and stored for a few days or frozen for longer storage.
