  • 1 cup (130g) all-purpose flour, plus 1 teaspoon of flour (divided)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (omit if using salted butter)
  • 1/8 teaspoon cinnamon
  • 3/4 cup (160g) sugar
  • 1/4 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon lemon zest (optional)
  • 2 cups (325g) blueberries, rinsed, drained, and patted dry
  • 1 teaspoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch springform pan with butter, then dust with flour.
  2. In a medium bowl, combine flour, baking powder, salt, and cinnamon. Whisk together to combine.
  3. In a large bowl, beat butter on medium-high speed for 2 minutes. Add sugar and beat until light and fluffy, about 1-2 minutes. Add vanilla, eggs (one at a time), and lemon zest (optional), beating well after each addition.
  4. Reduce mixer speed to low and add dry ingredients gradually. Mix until just combined. The batter will be thick. Gently fold in blueberries mixed with the remaining teaspoon of flour and lemon juice.
  5. Pour the batter into the prepared pan. Bake for 45–55 minutes, or until a toothpick comes out clean. Cool for 10 minutes in the pan, then remove and dust with powdered sugar.
