Instructions

  1. In a large bowl, mix the flour, sugar, and salt. Add the chilled, cubed butter and combine until the mixture resembles coarse crumbs.
  2. Slowly add ice water, one tablespoon at a time, mixing until the dough holds together. Divide the dough into two parts, wrap in plastic wrap, and refrigerate for at least 1 hour.
  3. In a mixing bowl, combine the blackberries, sugar, cornstarch, lemon juice, and cinnamon. Let the mixture sit for 10-15 minutes.
  4. Roll out one disk of dough on a floured surface to fit a 9-inch pie plate. Press it into the plate and trim the edges.
  5. Fill the crust with the blackberry mixture, dot with butter, and roll out the second disk to cover the pie.
  6. Seal the edges and make slits in the top or create a lattice pattern. Brush with egg wash if desired.
  7. Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, until the crust is golden and the filling is bubbling.
