- 4 cups fresh blackberries
- ¾ cup granulated sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon butter (dotted on top before baking)
- 1 egg (for egg wash, optional)
Instructions
- In a large bowl, mix the flour, sugar, and salt. Add the chilled, cubed butter and combine until the mixture resembles coarse crumbs.
- Slowly add ice water, one tablespoon at a time, mixing until the dough holds together. Divide the dough into two parts, wrap in plastic wrap, and refrigerate for at least 1 hour.
- In a mixing bowl, combine the blackberries, sugar, cornstarch, lemon juice, and cinnamon. Let the mixture sit for 10-15 minutes.
- Roll out one disk of dough on a floured surface to fit a 9-inch pie plate. Press it into the plate and trim the edges.
- Fill the crust with the blackberry mixture, dot with butter, and roll out the second disk to cover the pie.
- Seal the edges and make slits in the top or create a lattice pattern. Brush with egg wash if desired.
- Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, until the crust is golden and the filling is bubbling.
- Cool before serving.
Notes
- Substitute cornstarch with all-purpose flour if needed, though the filling may be slightly less thick.
- For a gluten-free crust, use a gluten-free flour blend.
- Frozen blackberries can be used, but adjust the baking time slightly.
- Let the pie cool completely before slicing for a cleaner cut.
