- 1 cup (200 g) granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup (240 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- 1 cup fresh blackberries
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the egg whites until soft peaks form, then gradually add sugar until glossy and stiff peaks form.
- Fold in vinegar, cornstarch, and vanilla extract, then spoon the meringue onto the parchment paper, shaping it into a circle.
- Bake for about 1 hour and 15 minutes until dry, then turn off the oven and let it cool inside.
- Beat the heavy whipping cream with powdered sugar until soft peaks form.
- Once the pavlova is cool, transfer it to a serving platter, fill the center with whipped cream, and top with blackberries and mint leaves.
