  • 1 cup fresh blackberries
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites until soft peaks form, then gradually add sugar until glossy and stiff peaks form.
  3. Fold in vinegar, cornstarch, and vanilla extract, then spoon the meringue onto the parchment paper, shaping it into a circle.
  4. Bake for about 1 hour and 15 minutes until dry, then turn off the oven and let it cool inside.
  5. Beat the heavy whipping cream with powdered sugar until soft peaks form.
  6. Once the pavlova is cool, transfer it to a serving platter, fill the center with whipped cream, and top with blackberries and mint leaves.
