  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup full-fat sour cream, at room temperature
  • 1 and 1/3 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 heaping cup fresh or frozen blackberries (do not thaw)
  • 8 ounces full-fat brick cream cheese, softened
  • 1/3 cup packed dark or light brown sugar
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1 and 1/2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed
  • 3/4 cup confectioners sugar (optional for icing)
  • 1 and 1/2 tablespoons milk, heavy cream, or lemon juice (optional for icing)
  • 1/2 teaspoon pure vanilla extract (optional for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch or 10-inch springform pan.
  2. In a large bowl, beat the softened butter and 3/4 cup granulated sugar together until creamy and fluffy, about 2-3 minutes. Mix in the eggs one at a time, followed by the vanilla extract and sour cream.
  3. Slowly add the flour, baking powder, baking soda, and salt, mixing until just combined. Gently fold in the blackberries.
  4. Pour the thick batter into the prepared pan and spread it evenly.
  5. In a separate bowl, beat the cream cheese with the remaining 1/4 cup sugar until smooth. Spread this over the cake batter.
  6. For the crumb topping, combine brown sugar, 1/2 cup flour, and ground cinnamon in a bowl, add cold cubed butter, and mix until crumbly. Sprinkle this over the cream cheese layer.
  7. Bake for 60-65 minutes or until the center comes out mostly clean with a toothpick. Let cool for at least 30 minutes before serving.
  8. For icing (optional), whisk confectioners sugar with milk (or heavy cream/lemon juice) and vanilla until smooth. Drizzle over the cooled cake.

Notes

Serve warm or at room temperature, possibly with whipped cream or fresh berries.
