Ingredients
Scale
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup granulated sugar
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1/2 cup full-fat sour cream, at room temperature
- 1 and 1/3 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 heaping cup fresh or frozen blackberries (do not thaw)
- 8 ounces full-fat brick cream cheese, softened
- 1/3 cup packed dark or light brown sugar
- 1/2 cup all-purpose flour, spooned and leveled
- 1 and 1/2 teaspoons ground cinnamon
- 3 tablespoons unsalted butter, cold and cubed
- 3/4 cup confectioners sugar (optional for icing)
- 1 and 1/2 tablespoons milk, heavy cream, or lemon juice (optional for icing)
- 1/2 teaspoon pure vanilla extract (optional for icing)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch or 10-inch springform pan.
- In a large bowl, beat the softened butter and 3/4 cup granulated sugar together until creamy and fluffy, about 2-3 minutes. Mix in the eggs one at a time, followed by the vanilla extract and sour cream.
- Slowly add the flour, baking powder, baking soda, and salt, mixing until just combined. Gently fold in the blackberries.
- Pour the thick batter into the prepared pan and spread it evenly.
- In a separate bowl, beat the cream cheese with the remaining 1/4 cup sugar until smooth. Spread this over the cake batter.
- For the crumb topping, combine brown sugar, 1/2 cup flour, and ground cinnamon in a bowl, add cold cubed butter, and mix until crumbly. Sprinkle this over the cream cheese layer.
- Bake for 60-65 minutes or until the center comes out mostly clean with a toothpick. Let cool for at least 30 minutes before serving.
- For icing (optional), whisk confectioners sugar with milk (or heavy cream/lemon juice) and vanilla until smooth. Drizzle over the cooled cake.
