The Black Magic Blackout Cake is a rich and moist chocolate cake layered with chocolate frosting and topped with chocolate ganache, perfect for any occasion.

Ingredients

  • All-purpose flour – 2 cups (240 g)
  • Granulated sugar – 2 cups (400 g)
  • Unsweetened cocoa powder – 3/4 cup (75 g)
  • Baking soda – 1 1/2 teaspoons
  • Baking powder – 1 1/2 teaspoons
  • Salt – 1 teaspoon
  • Eggs – 2 large
  • Whole milk – 1 cup (240 ml)
  • Vegetable oil – 1 cup (240 ml)
  • Vanilla extract – 2 teaspoons
  • Boiling water – 1 cup (240 ml)
  • Unsalted butter – 1 cup (227 g), softened
  • Unsweetened cocoa powder – 2/3 cup (65 g)
  • Powdered sugar – 3 cups (360 g)
  • Whole milk – 1/3 cup (80 ml)
  • Vanilla extract – 1 teaspoon
  • Heavy cream – 1 cup (240 ml)
  • Semi-sweet chocolate chips – 1 cup (175 g)
  • Chocolate shavings – for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt in a large mixing bowl.
  3. In another bowl, whisk together the eggs, whole milk, vegetable oil, and vanilla extract. Gradually add this wet mixture to the dry ingredients and mix gently until just combined. Slowly stir in the boiling water.
  4. Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes. Check for doneness with a toothpick.
  5. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
  6. While the cakes are cooling, make the chocolate frosting by beating the softened unsalted butter until creamy, then gradually adding cocoa powder and powdered sugar, alternating with whole milk until smooth. Stir in vanilla extract.
  7. Once the cakes are completely cool, place one layer on a serving plate and spread chocolate frosting on top. Place the second layer on top and cover the entire cake with the remaining frosting.
  8. Prepare the chocolate ganache by heating heavy cream until it simmers, then stirring in semi-sweet chocolate chips until melted and smooth. Allow it to cool slightly before pouring over the frosted cake.
  9. Garnish with chocolate shavings and serve.

Notes

  • Ensure all ingredients are at room temperature for better mixing.
  • Store the cake in an airtight container to maintain moisture.
  • For a healthier version, consider using whole wheat flour and natural sweeteners.
