Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1 teaspoon of salt. Whisk until well mixed.
  3. Add the cold, cubed butter to the flour mixture and cut it in until it resembles coarse crumbs. Then, pour in 1 cup of buttermilk and stir gently until just combined.
  4. Turn the dough out onto a floured surface, knead gently, and pat into a rectangle about 1-inch thick. Cut out biscuits and place them on a baking sheet lined with parchment paper. Bake for 12-15 minutes until golden brown.
  5. In a large skillet over medium heat, cook 1 pound of pork sausage until browned. Drain excess fat, leaving about 1 tablespoon in the pan.
  6. Sprinkle 1/4 cup of flour over the sausage and stir to combine, creating a roux.
  7. Gradually whisk in 2 cups of milk, stirring until thickened (about 5-7 minutes). Season with black pepper and salt to taste.
  8. Let the gravy simmer for a few more minutes, then serve over the warm biscuits.
