Instructions
- Prepare the coffee mixture by brewing a strong cup of coffee and letting it cool to room temperature.
- In a large mixing bowl, combine mascarpone cheese, granulated sugar, and vanilla extract, then blend until smooth. In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the mascarpone mixture.
- Combine the whipped cream and mascarpone mixture until smooth.
- Dip each Biscoff cookie into the cooled coffee and layer them in a glass dish, alternating with layers of the mascarpone mixture.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. Dust with cocoa powder and sprinkle crumbled Biscoff cookies before serving.
