A delightful treat that combines the rich flavors of cookies and the irresistible taste of Biscoff spread, resulting in soft, chewy cookies with a gooey, sweet center.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted butter: 1 cup (226 grams), softened
  • Brown sugar: 3/4 cup (150 grams), packed
  • Granulated sugar: 1/4 cup (50 grams)
  • Vanilla extract: 1 teaspoon
  • Large eggs: 1 large
  • Biscoff spread: 1 cup (about 250 grams)
  • Coarse sea salt: for sprinkling

Instructions

  1. Prepare the cookie dough by whisking together the flour, baking soda, baking powder, and salt in a medium bowl.
  2. Cream the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Cover the dough with plastic wrap and refrigerate for about 30 minutes.
  6. Prepare the Biscoff filling by scooping out the spread into small balls and freezing them for about 15 minutes.
  7. Take about 2 tablespoons of cookie dough, flatten it, place a frozen Biscoff ball in the center, and wrap the dough around it.
  8. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Place the cookie balls on the baking sheet, sprinkle with coarse sea salt, and bake for 10-12 minutes.
  10. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
