- 6 tablespoons unsalted butter, melted and slightly cooled
- 2 and 1/4 cups all-purpose flour, spooned and leveled
- 1/3 cup granulated sugar
- 2 teaspoons baking powder

- 2 cups buttermilk
- 2 teaspoons pure vanilla extract or vanilla bean paste

- 1/2 cup confectioners’ sugar, sifted
- 1/2 teaspoon pure vanilla extract
- 1/2 tablespoon milk

Instructions
- Prepare the butter by melting 6 tablespoons of unsalted butter in a small pan or microwave and set aside to cool slightly.
- In a large mixing bowl, combine 2 and 1/4 cups of all-purpose flour, 1/3 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Whisk until evenly mixed.
- In another bowl, crack 2 large eggs, add 2 cups of buttermilk, 2 teaspoons of vanilla extract, and 1/2 teaspoon of almond extract. Whisk until well combined and then pour in the melted butter.
- Pour the wet mixture into the dry ingredient bowl and gently mix until just combined, avoiding overmixing. Let the batter rest for 5 minutes.
- Gently fold in 1/2 cup of rainbow sprinkles until evenly distributed.
- Preheat a griddle or large skillet over medium heat and coat with butter or nonstick spray.
- Using a 1/4 cup measuring cup, pour the batter onto the griddle. Cook for 2 minutes until edges set, then flip and cook for another 1-2 minutes until golden brown.
- Keep pancakes warm in an oven preheated to 200°F while cooking the rest.
- Prepare the icing by whisking together 1/2 cup confectioners’ sugar, 1/2 teaspoon vanilla extract, and 1/2 tablespoon milk until smooth.
- Serve pancakes stacked high, drizzled with icing, topped with whipped cream and more rainbow sprinkles.
