  • 2 and 1/4 cups all-purpose flour, spooned and leveled
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder

  • 2 large eggs
  • 2 cups buttermilk
  • 2 teaspoons pure vanilla extract or vanilla bean paste
  • 1/2 teaspoon almond extract
  • 1/2 cup rainbow sprinkles (not nonpareils)
  • Butter or nonstick spray for cooking
  • 1/2 cup confectioners’ sugar, sifted
  • 1/2 teaspoon pure vanilla extract
  • 1/2 tablespoon milk
  • Whipped cream for serving
  • More rainbow sprinkles for serving

Instructions

  1. Prepare the butter by melting 6 tablespoons of unsalted butter in a small pan or microwave and set aside to cool slightly.
  2. In a large mixing bowl, combine 2 and 1/4 cups of all-purpose flour, 1/3 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Whisk until evenly mixed.
  3. In another bowl, crack 2 large eggs, add 2 cups of buttermilk, 2 teaspoons of vanilla extract, and 1/2 teaspoon of almond extract. Whisk until well combined and then pour in the melted butter.
  4. Pour the wet mixture into the dry ingredient bowl and gently mix until just combined, avoiding overmixing. Let the batter rest for 5 minutes.
  5. Gently fold in 1/2 cup of rainbow sprinkles until evenly distributed.
  6. Preheat a griddle or large skillet over medium heat and coat with butter or nonstick spray.
  7. Using a 1/4 cup measuring cup, pour the batter onto the griddle. Cook for 2 minutes until edges set, then flip and cook for another 1-2 minutes until golden brown.
  8. Keep pancakes warm in an oven preheated to 200°F while cooking the rest.
  9. Prepare the icing by whisking together 1/2 cup confectioners’ sugar, 1/2 teaspoon vanilla extract, and 1/2 tablespoon milk until smooth.
  10. Serve pancakes stacked high, drizzled with icing, topped with whipped cream and more rainbow sprinkles.
