Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl, then press the mixture into a 9-inch springform pan. Bake for 10 minutes, then cool.
- Beat cream cheese with sugar and vanilla until smooth. Add eggs one at a time, mixing well after each. Add sour cream, heavy cream, and cake mix. Mix until combined.
- Pour the cheesecake mixture over the cooled crust. Tap the pan to release air bubbles.
- Bake for 55-70 minutes, until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
- After cooling, refrigerate for at least 4 hours or overnight. Remove from the pan and slice.
