Description

  • 1/2 cup packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1 cup creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 cups old-fashioned whole rolled oats
  • 1 and 1/2 cups mini M&Ms
  • 1 and 1/2 cups semi-sweet chocolate chips

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large mixing bowl, beat the softened butter until creamy. Add granulated and brown sugar and beat for 2 minutes until fluffy.
  3. Add eggs, peanut butter, and vanilla extract. Beat on high speed until well combined, scraping down the sides as needed.
  4. Gradually add the dry ingredients and mix on low speed until just combined.
  5. Fold in oats, mini M&Ms, and chocolate chips until evenly distributed.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes.
  7. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper or silicone mats.
  8. Scoop dough (about 65g per cookie) and place on baking sheets 3 inches apart.
  9. Bake for 14–16 minutes until edges are golden and centers are slightly soft.
  10. Let cookies cool on the sheet for 10 minutes before transferring to a wire rack.
