- 2 large eggs, at room temperature
- 1 cup creamy peanut butter
- 2 teaspoons pure vanilla extract
- 2 cups old-fashioned whole rolled oats
- 1 and 1/2 cups mini M&Ms
- 1 and 1/2 cups semi-sweet chocolate chips
Instructions
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter until creamy. Add granulated and brown sugar and beat for 2 minutes until fluffy.
- Add eggs, peanut butter, and vanilla extract. Beat on high speed until well combined, scraping down the sides as needed.
- Gradually add the dry ingredients and mix on low speed until just combined.
- Fold in oats, mini M&Ms, and chocolate chips until evenly distributed.
- Cover the dough and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (177°C) and line baking sheets with parchment paper or silicone mats.
- Scoop dough (about 65g per cookie) and place on baking sheets 3 inches apart.
- Bake for 14–16 minutes until edges are golden and centers are slightly soft.
- Let cookies cool on the sheet for 10 minutes before transferring to a wire rack.
