- 1 cup heavy cream (for frosting)
- ½ cup powdered sugar (for frosting)

- 1 cup berry compote (store-bought or homemade)
- Fresh mint leaves (for garnish)
Instructions
- Prepare the cake batter by creaming together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt, then gradually add to the butter mixture, alternating with milk.
- Fold in mixed berries gently.
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Divide the batter evenly between the pans and smooth the tops.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare the berry filling if making homemade compote, then let it cool.
- Assemble the cake by placing one layer on a serving plate, spreading frosting and berry compote on top, then adding the second layer.
- Frost the top and sides of the cake with remaining whipped cream frosting.
- Drizzle additional berry compote on top and garnish with fresh mint leaves.
