  • ½ cup powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 cup berry compote (store-bought or homemade)
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare the cake batter by creaming together softened butter and granulated sugar until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt, then gradually add to the butter mixture, alternating with milk.
  4. Fold in mixed berries gently.
  5. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  6. Divide the batter evenly between the pans and smooth the tops.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Prepare the berry filling if making homemade compote, then let it cool.
  10. Assemble the cake by placing one layer on a serving plate, spreading frosting and berry compote on top, then adding the second layer.
  11. Frost the top and sides of the cake with remaining whipped cream frosting.
  12. Drizzle additional berry compote on top and garnish with fresh mint leaves.
