  • Salt – a pinch
  • Semi-sweet chocolate – 1 cup (170 grams)
  • Chopped nuts (such as almonds or pecans) – 1/2 cup (75 grams)

Instructions

  1. Gather your ingredients and measure them out.
  2. Prepare your cooking equipment: a medium saucepan, spatula, candy thermometer, and an 8×8 inch baking pan lined with parchment paper.
  3. Combine unsalted butter, granulated sugar, water, and a pinch of salt in the saucepan over medium heat until melted and smooth.
  4. Increase heat to medium-high and bring to a boil without stirring, using a wet pastry brush to wash down sugar crystals on the sides. Cook until it reaches 300°F (150°C).
  5. Remove from heat, stir in vanilla extract, and pour into the prepared baking pan. Allow to cool for 5 minutes.
