Ingredients
- Unsalted butter – 1 cup (226 grams)
- Granulated sugar – 1 cup (200 grams)
- Water – 2 tablespoons (30 ml)
- Vanilla extract – 1 teaspoon (5 ml)
- Salt – a pinch
- Semi-sweet chocolate – 1 cup (170 grams)
- Chopped nuts (such as almonds or pecans) – 1/2 cup (75 grams)
Instructions
- Gather your ingredients and measure them out.
- Prepare your cooking equipment: a medium saucepan, spatula, candy thermometer, and an 8×8 inch baking pan lined with parchment paper.
- Combine unsalted butter, granulated sugar, water, and a pinch of salt in the saucepan over medium heat until melted and smooth.
- Increase heat to medium-high and bring to a boil without stirring, using a wet pastry brush to wash down sugar crystals on the sides. Cook until it reaches 300°F (150°C).
- Remove from heat, stir in vanilla extract, and pour into the prepared baking pan. Allow to cool for 5 minutes.
- Once cooled and set (about 1-2 hours), break into pieces and store in an airtight container.
Notes
- Use a candy thermometer for accurate temperature.
- Do not stir the mixture once it starts boiling.
- Wash down sugar crystals to avoid graininess.
- Let the toffee cool completely before cutting.
