Description
Berry Yogurt Bark is a refreshing frozen treat made with creamy Greek yogurt and swirled mixed berries—perfect for a healthy snack or dessert.
Ingredients
Scale
- 3 cups mixed berries (raspberries, blackberries, blueberries, and strawberries)
- 2 tablespoons orange juice
- 2 tablespoons honey
- A large pinch of kosher salt
- 1 teaspoon pure vanilla extract
- 4 (5.3 oz) containers of Two Good Strawberry Greek low-fat yogurt
Instructions
- In a small pot, combine mixed berries, orange juice, honey, and kosher salt over medium heat. Bring to a gentle boil and cook for about 8 minutes, stirring occasionally. Remove from heat and stir in vanilla extract. Let the mixture cool completely.
- Line a rimmed baking sheet with parchment paper, allowing it to hang over the edges for easy removal.
- Spread the yogurt evenly across the baking sheet in a thin, even layer about 1/2 inch thick.
- Dollop the cooled berry mixture over the yogurt. Use a toothpick or skewer to swirl the berries gently into the yogurt. Avoid over-mixing to maintain a marbled effect.
- Tap the baking sheet gently to level the surface and sprinkle additional whole berries on top if desired.
- Freeze the bark for at least 2 hours, or until fully solid.
- Once frozen, peel the bark from the parchment paper and break into pieces before serving.
Notes
- Allow the berry mixture to cool completely before swirling into the yogurt to prevent melting.
- Use parchment paper for easy removal of bark after freezing.
- Store broken bark pieces in an airtight container with parchment between layers.
- Use different fruit and yogurt flavors for a unique twist.
- Freeze for at least 2 hours; longer if needed for a firm set.
