Description

Berry Yogurt Bark is a refreshing frozen treat made with creamy Greek yogurt and swirled mixed berries—perfect for a healthy snack or dessert.


Ingredients

  • 3 cups mixed berries (raspberries, blackberries, blueberries, and strawberries)
  • 2 tablespoons orange juice
  • 2 tablespoons honey
  • A large pinch of kosher salt
  • 1 teaspoon pure vanilla extract
  • 4 (5.3 oz) containers of Two Good Strawberry Greek low-fat yogurt

Instructions

  1. In a small pot, combine mixed berries, orange juice, honey, and kosher salt over medium heat. Bring to a gentle boil and cook for about 8 minutes, stirring occasionally. Remove from heat and stir in vanilla extract. Let the mixture cool completely.
  2. Line a rimmed baking sheet with parchment paper, allowing it to hang over the edges for easy removal.
  3. Spread the yogurt evenly across the baking sheet in a thin, even layer about 1/2 inch thick.
  4. Dollop the cooled berry mixture over the yogurt. Use a toothpick or skewer to swirl the berries gently into the yogurt. Avoid over-mixing to maintain a marbled effect.
  5. Tap the baking sheet gently to level the surface and sprinkle additional whole berries on top if desired.
  6. Freeze the bark for at least 2 hours, or until fully solid.
  7. Once frozen, peel the bark from the parchment paper and break into pieces before serving.
