Beef tenderloin with mushroom sauce is a classic dish that brings elegance to any dining table, known for its buttery texture and rich flavor, making it a favorite among meat lovers.

Ingredients

Scale
  • Beef tenderloin: 1 lb (450 g), trimmed and cut into thick medallions.
  • Fresh mushrooms: 8 oz (225 g), sliced.
  • Garlic: 2 cloves, minced.
  • Shallots: 2, finely chopped.
  • Heavy cream: 1 cup (240 ml).
  • Beef broth: 1 cup (240 ml).
  • Butter: 2 tablespoons (30 g).
  • Fresh thyme: 1 tablespoon, chopped (plus extra for garnish).
  • Salt: to taste.
  • Black pepper: to taste.
  • Olive oil: 1 tablespoon (for cooking).

Instructions

  1. Season the beef medallions generously with salt and black pepper on both sides and let them sit at room temperature for 15-20 minutes.
  2. In a large skillet, heat olive oil over medium-high heat, then add butter and let it melt.
  3. Add finely chopped shallots and minced garlic to the skillet and sauté for about 2 minutes until fragrant.
  4. Add sliced mushrooms and cook for 5-7 minutes until browned and tender.
  5. Pour in the beef broth and bring to a simmer, letting it reduce for about 5 minutes.
  6. In the same skillet, add the seasoned beef medallions and sear for 3-4 minutes on each side for medium-rare.
  7. Remove the beef from the skillet and let it rest on a plate, loosely covered with aluminum foil.
  8. Return the beef medallions to the skillet with the mushroom sauce, spoon the sauce over the beef, and warm through for about 2 minutes before serving.

Notes

  • Choose a bright red cut of beef with good marbling for the best flavor.
  • Experiment with fresh herbs like rosemary or parsley for added flavor.
  • Consider marinating the beef for a few hours or overnight for enhanced taste.
