- 3 ripe bananas – mashed (about 1 1/2 cups)
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (can reduce to 1/2 cup for less sweetness)
- 1 large egg – beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup walnuts – chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 4×8 inch loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add melted butter to the mashed bananas and mix well. Then add baking soda and salt, mixing thoroughly.
- Stir in sugar, beaten egg, and vanilla extract until evenly mixed.
- Gently fold in the all-purpose flour until just incorporated.
- If using, fold in the chopped walnuts gently into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes, checking for doneness with a toothpick.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
