Ingredients

- 1 cup mashed bananas (about 2–3 ripe bananas)
- 2 and 1/2 cups quick oats or old-fashioned whole rolled oats
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup coconut oil, melted
- 3/4 cup natural style almond butter
- 1/4 cup pure maple syrup or honey
- 1/2 cup dairy-free chocolate chips
Instructions
- Preheat your oven to 325°F (160°C).
- Line two large baking sheets with parchment paper.
- In a large mixing bowl, combine the mashed bananas, oats, salt, ground cinnamon, melted coconut oil, almond butter, maple syrup or honey, and dairy-free chocolate chips. Stir until well combined.
- Using a 1/4 cup measuring cup, portion out the cookie dough onto the prepared baking sheets and flatten slightly.
- Bake for about 17 to 20 minutes, or until the edges turn lightly golden brown.
- Allow to cool on the baking sheet for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use well-ripened bananas for maximum sweetness. Consider adding nuts or dried fruits for variety.
