Delightful cookies combining the sweetness of bananas and rich chocolate chips, perfect for breakfast or a snack.


Ingredients

  • 1 cup mashed bananas (about 23 ripe bananas)
  • 2 and 1/2 cups quick oats or old-fashioned whole rolled oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup coconut oil, melted
  • 3/4 cup natural style almond butter
  • 1/4 cup pure maple syrup or honey
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Line two large baking sheets with parchment paper.
  3. In a large mixing bowl, combine the mashed bananas, oats, salt, ground cinnamon, melted coconut oil, almond butter, maple syrup or honey, and dairy-free chocolate chips. Stir until well combined.
  4. Using a 1/4 cup measuring cup, portion out the cookie dough onto the prepared baking sheets and flatten slightly.
  5. Bake for about 17 to 20 minutes, or until the edges turn lightly golden brown.
  6. Allow to cool on the baking sheet for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use well-ripened bananas for maximum sweetness. Consider adding nuts or dried fruits for variety.
