Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the vegetables by trimming and slicing the fennel and cutting the carrots into sticks.
- Mix the balsamic glaze in a small bowl with balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
- Combine the glaze with the vegetables and toss until evenly coated, then spread on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until the fennel is soft and the carrots are tender.
- Serve warm or at room temperature, drizzling any remaining glaze over the top.
