  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 cups creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 cups semi-sweet chocolate chips
  • Optional: 1/2 cup granulated sugar for rolling

Instructions

  1. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Mix in peanut butter and vanilla extract until smooth.
  4. Gradually add dry mixture into wet ingredients, folding gently to combine.
  5. Fold in chocolate chips until evenly distributed.
  6. Chill dough in the refrigerator for at least 1 hour.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough into balls and optionally roll in granulated sugar before placing on baking sheets.
  9. Flatten each dough ball slightly and bake for 14-15 minutes until edges are set.
  10. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
