  • Breadcrumbs: 1 cup (preferably panko for extra crunch).
  • Egg: 1 large.
  • Garlic: 2 cloves, minced.
  • Fresh dill: 2 tablespoons, chopped (or 1 tablespoon dried dill).
  • Lemon zest: 1 teaspoon.
  • Salt: 1 teaspoon.
  • Pepper: 1/2 teaspoon.
  • Olive oil: 1 tablespoon (for drizzling).
  • Ripe avocados: 2 medium, peeled and pitted.

Instructions

  1. Prepare the salmon by removing the skin and chopping it into small pieces.
  2. In a large mixing bowl, combine the chopped salmon, breadcrumbs, egg, minced garlic, chopped dill, lemon zest, salt, and pepper.

  4. Drizzle olive oil over the meatballs and bake in a preheated oven for 15-20 minutes until golden brown and cooked through.
  5. While the meatballs are baking, prepare the avocado sauce by blending ripe avocados, lime juice, Greek yogurt, salt, and pepper until smooth.
  6. Serve the warm meatballs with the creamy avocado sauce for dipping.
