Ingredients
- Fresh salmon fillet: 500 grams (about 1 lb), skin removed and chopped.
- Breadcrumbs: 1 cup (preferably panko for extra crunch).
- Egg: 1 large.
- Garlic: 2 cloves, minced.
- Fresh dill: 2 tablespoons, chopped (or 1 tablespoon dried dill).
- Lemon zest: 1 teaspoon.
- Salt: 1 teaspoon.
- Pepper: 1/2 teaspoon.
- Olive oil: 1 tablespoon (for drizzling).
- Ripe avocados: 2 medium, peeled and pitted.
- Lime juice: 2 tablespoons (freshly squeezed).
- Greek yogurt: 1/2 cup.
- Salt: to taste.
- Pepper: to taste.
Instructions
- Prepare the salmon by removing the skin and chopping it into small pieces.
- In a large mixing bowl, combine the chopped salmon, breadcrumbs, egg, minced garlic, chopped dill, lemon zest, salt, and pepper.
- Form the mixture into meatballs about 1.5 inches in diameter and place them on a baking sheet.
- Drizzle olive oil over the meatballs and bake in a preheated oven for 15-20 minutes until golden brown and cooked through.
- While the meatballs are baking, prepare the avocado sauce by blending ripe avocados, lime juice, Greek yogurt, salt, and pepper until smooth.
