- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries (mashed)
- 1/4 cup crushed pistachios (for topping)
For the raspberry glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh raspberry puree
- 1–2 tablespoons milk
Instructions
- Preheat the oven to 350°F (175°C) and grease the donut pan.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: buttermilk, melted butter, egg, vanilla extract, and mashed raspberries.
- Combine the wet and dry ingredients, stirring gently until just combined. Fold in the remaining mashed raspberries and crushed pistachios.
- Fill the donut pan cavities about 2/3 full with the batter.
- Bake for 10-12 minutes, or until a toothpick comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
- Once cooled, dip the tops of the donuts in the raspberry glaze and let excess drip off.
Notes
- Use fresh raspberries for the best flavor.
- Consider using a piping bag for filling the donut pan for less mess.
- Let the donuts cool completely before glazing to prevent melting.
