- 2 cups rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/2 cup honey or maple syrup
- 2 ripe bananas, mashed
- 1/2 cup applesauce
- 1/2 cup chopped nuts (such as walnuts or almonds)
- 1 cup mixed berries (fresh or frozen)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- Optional: 1/4 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8 or 9×13 inch pan.
- In a large bowl, combine oats, baking powder, cinnamon, and salt. Add any nuts or chocolate chips if using.
- In another bowl, mash the bananas and mix with applesauce, milk, and sweetener. Combine well.
- Pour the wet ingredients into the dry and stir gently. Add berries and fold them into the mixture.
- Transfer the mixture to the prepared baking pan, smoothing the top. Bake for 25-30 minutes until golden and a toothpick comes out clean.
- Allow the bars to cool slightly before cutting into squares. Serve warm or at room temperature.
Notes
- Don’t overmix the batter to avoid dense bars.
- Ensure bars are fully baked before removing from the oven to avoid crumbling.
- Let the bars cool completely before cutting for easier slicing.
