Ingredients

  • 1/2 cup honey or maple syrup
  • 2 ripe bananas, mashed
  • 1/2 cup applesauce
  • 1/2 cup chopped nuts (such as walnuts or almonds)
  • 1 cup mixed berries (fresh or frozen)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 or 9×13 inch pan.
  2. In a large bowl, combine oats, baking powder, cinnamon, and salt. Add any nuts or chocolate chips if using.
  3. In another bowl, mash the bananas and mix with applesauce, milk, and sweetener. Combine well.
  4. Pour the wet ingredients into the dry and stir gently. Add berries and fold them into the mixture.
  5. Transfer the mixture to the prepared baking pan, smoothing the top. Bake for 25-30 minutes until golden and a toothpick comes out clean.
  6. Allow the bars to cool slightly before cutting into squares. Serve warm or at room temperature.
