Ingredients

- Ripe avocados: 2 medium, diced.

- Fresh cilantro: 1/4 cup, chopped.
- Lime juice: 2 tablespoons, freshly squeezed.
- Olive oil: 2 tablespoons.
- Salt and pepper: to taste.
Instructions
- Heat a medium-sized skillet over medium heat and add 1 tablespoon of olive oil.
- Season the shrimp with salt and pepper, then add to the skillet and cook for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from heat and let them cool slightly.
- In a large mixing bowl, combine diced avocados, diced tomatoes, finely chopped red onion, and chopped cilantro.
- Gently mix the salsa ingredients together without mashing the avocados.
- Once the shrimp has cooled, add it to the bowl with the avocado mixture.
- In a small bowl, whisk together lime juice, remaining olive oil, and a pinch of salt and pepper, then pour over the salad.
- Gently toss everything together, being careful not to mash the avocados.
- Transfer the salad to a serving platter or individual bowls and garnish with additional cilantro.
