Avocado Boba is a creamy and refreshing bubble tea variation combining ripe avocado, sweet brown sugar tapioca pearls, and milk for a unique drink experience.

- 125 g uncooked tapioca pearls
- 30 g brown sugar
- 1 large avocado
- 400 g milk
- 30 g condensed milk
- 200 g ice
Instructions
- Bring 6 cups of water to a rolling boil in a medium pot. Add tapioca pearls and stir immediately to prevent sticking.
- Boil uncovered for 15 minutes, stirring occasionally.
- Remove from heat, cover, and let sit for another 15 minutes.
- Drain pearls and transfer to a bowl. While warm, stir in brown sugar until dissolved. Add water if needed for syrup consistency.
- In a blender, combine avocado flesh, milk, condensed milk, and ice. Blend until smooth and creamy.
- To serve, spoon about 100 g of tapioca pearls into a tall glass, pour avocado smoothie on top, and stir gently.
Notes
- Use ripe avocados for a creamier texture and better flavor.
- Sweeten the tapioca pearls while warm for optimal syrup absorption.
- Do not overcook tapioca pearls to avoid sogginess.
- Serve immediately for best texture.
- Store tapioca pearls and avocado smoothie separately if keeping leftovers.
