Instructions
- Rinse the long-grain rice under cold water until the water runs clear.
- Heat vegetable oil in a medium saucepan over medium heat and sauté the chopped onion until translucent.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in diced tomatoes and cook for about 5 minutes.
- Add the rinsed rice and toast for 2-3 minutes.
- Pour in vegetable broth, add ground cumin, and season with salt and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes.
- Fluff the rice with a fork, stir in peas and carrots, cover, and let sit for 5 minutes.
- Stir in chopped cilantro before serving.
