Instructions

  1. Rinse the long-grain rice under cold water until the water runs clear.
  2. Heat vegetable oil in a medium saucepan over medium heat and sauté the chopped onion until translucent.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Stir in diced tomatoes and cook for about 5 minutes.
  5. Add the rinsed rice and toast for 2-3 minutes.
  6. Pour in vegetable broth, add ground cumin, and season with salt and pepper. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 15-20 minutes.
  8. Fluff the rice with a fork, stir in peas and carrots, cover, and let sit for 5 minutes.
  9. Stir in chopped cilantro before serving.
