- Crisp apples: 2 medium (such as Honeycrisp or Fuji), cored and sliced

Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper, then spread them on a baking sheet and roast for 25-30 minutes.
