  • Honey: 1 tablespoon
  • Lemon juice: 2 tablespoons (freshly squeezed)
  • Crisp apples: 2 medium (such as Honeycrisp or Fuji), cored and sliced
  • Walnuts: 1/2 cup, chopped and toasted
  • Feta cheese: 1/2 cup, crumbled
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper, then spread them on a baking sheet and roast for 25-30 minutes.
  3. Wash and chop the kale, then massage it with 1 teaspoon of olive oil in a large salad bowl.
