Description

Apple Streusel Coffee Cake is a cozy and comforting treat that combines tender, spiced cake with fresh apples and a buttery crumb topping. Perfect for breakfast, brunch, or an afternoon snack, it brings the flavors of fall to your table year-round.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 medium apples, peeled, cored, and diced (about 1 ½ cups)
  • For the Streusel Topping:
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the butter and sugar until light and fluffy (about 3–5 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the sour cream until fully combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced apples.
  7. In a separate bowl, prepare the streusel by mixing flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  8. Pour the batter into the prepared pan and smooth the top. Sprinkle the streusel topping evenly over the batter.
  9. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overmix the batter to keep the cake light and tender.
  • Greek yogurt can be used instead of sour cream.
  • Use a combination of tart and sweet apples for more flavor depth.
  • Ensure your butter for the streusel is cold for best texture.
  • The cake can be frozen for up to 2 months.
