Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin by lining the cups with paper liners or greasing them with cooking spray.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and applesauce.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined. Gently fold in the diced apples.
- Fill the muffin tins about two-thirds full with batter and sprinkle the cinnamon-sugar topping over each muffin.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
