- ½ cup unsalted butter (cold and cubed)
Instructions
- Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and granulated sugar. Press into a 9-inch springform pan and bake for 8-10 minutes. Cool.
- For the filling, beat softened cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla extract, and mix until smooth.
- In a bowl, combine sliced apples, cinnamon, lemon juice, and granulated sugar. Toss until the apples are coated.
- For the crumble topping, mix flour, oats, brown sugar, cinnamon, and cold cubed butter. Work it into a crumbly texture.
- Pour cheesecake filling over the cooled crust. Layer the apples on top of the filling, and sprinkle the crumble topping over the apples.
- Bake for 55-60 minutes or until the center is set but slightly jiggly. Let cool for 1 hour inside the oven with the door slightly ajar. Remove from the oven and cool completely.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving. Slice and serve chilled.
