  • 3 medium apples (peeled, cored, and sliced)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • ¼ cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter (cold and cubed)

Instructions

  1. Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and granulated sugar. Press into a 9-inch springform pan and bake for 8-10 minutes. Cool.
  2. For the filling, beat softened cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla extract, and mix until smooth.
  3. In a bowl, combine sliced apples, cinnamon, lemon juice, and granulated sugar. Toss until the apples are coated.
  4. For the crumble topping, mix flour, oats, brown sugar, cinnamon, and cold cubed butter. Work it into a crumbly texture.
  5. Pour cheesecake filling over the cooled crust. Layer the apples on top of the filling, and sprinkle the crumble topping over the apples.
  6. Bake for 55-60 minutes or until the center is set but slightly jiggly. Let cool for 1 hour inside the oven with the door slightly ajar. Remove from the oven and cool completely.
