Ingredients
- All-purpose flour – 2 cups (240 g)
- Brown sugar – 1/2 cup (100 g), packed
- Granulated sugar – 1/2 cup (100 g)
- Baking powder – 2 teaspoons
- Baking soda – 1 teaspoon
- Salt – 1/2 teaspoon
- Ground cinnamon – 1 teaspoon
- Ground nutmeg – 1/2 teaspoon
- Apple cider – 1 cup (240 ml)
- Eggs – 2 large
- Unsalted butter – 1/2 cup (113 g), melted and slightly cooled
- Diced apples – 1 cup (about 2 medium apples)
- All-purpose flour – 1/2 cup (60 g)
- Brown sugar – 1/4 cup (50 g), packed
- Ground cinnamon – 1/2 teaspoon
- Unsalted butter – 3 tablespoons (42 g), cold and cubed
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
- In a large bowl, whisk together the dry ingredients: flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, mix the wet ingredients: apple cider, eggs, and melted butter.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed.
- Prepare the streusel topping by mixing flour, brown sugar, and cinnamon, then adding cold butter until crumbly.
- Fold diced apples into the muffin batter, then fill muffin cups 2/3 full and top with streusel.
- Bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.
