  • Ground cinnamon – 1 teaspoon
  • Ground nutmeg – 1/2 teaspoon
  • Apple cider – 1 cup (240 ml)
  • Eggs – 2 large
  • Unsalted butter – 1/2 cup (113 g), melted and slightly cooled
  • Diced apples – 1 cup (about 2 medium apples)
  • All-purpose flour – 1/2 cup (60 g)
  • Brown sugar – 1/4 cup (50 g), packed
  • Ground cinnamon – 1/2 teaspoon
  • Unsalted butter – 3 tablespoons (42 g), cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together the dry ingredients: flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the wet ingredients: apple cider, eggs, and melted butter.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  5. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon, then adding cold butter until crumbly.
  6. Fold diced apples into the muffin batter, then fill muffin cups 2/3 full and top with streusel.
  7. Bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.
