Instructions
- Prepare the dates by simmering them with 250 milliliters of apple cider for about 5 minutes until soft.
- Cream together 100 grams of softened unsalted butter and 150 grams of packed brown sugar until light and fluffy.
- Add 2 large eggs one at a time, mixing well after each addition, then stir in 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together 200 grams of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the date and apple cider mixture, mixing until just combined.
- Preheat the oven to 180°C (350°F) and grease an 8×8 inch baking dish or ramekins.
