Description

Apple Cider Sticky Toffee Pudding is a delightful twist on the classic British dessert, infused with the rich flavors of apple cider and sweet dates, perfect for cozy evenings or festive gatherings.

Ingredients

Scale
  • 200 grams (about 7 oz) dates: Pitted and chopped.
  • 250 milliliters (1 cup) apple cider: The star ingredient for fruity flavor.
  • 100 grams (1/2 cup) unsalted butter: Softened for richness.
  • 150 grams (3/4 cup) brown sugar: Packed for caramel-like sweetness.
  • 2 large eggs: For structure and moisture.
  • 200 grams (1 1/2 cups) all-purpose flour: The base of the pudding.
  • 1 teaspoon baking powder: For rising.
  • 1 teaspoon vanilla extract: For enhanced flavor.
  • A pinch of salt: To balance sweetness.

For the Apple Cider Glaze:

  • 100 milliliters (about 1/2 cup) apple cider: For the glaze.
  • 100 grams (1/2 cup) brown sugar: For caramel flavor.
  • 50 grams (1/4 cup) unsalted butter: For a smooth finish.

Instructions

  1. Prepare the dates by simmering them with 250 milliliters of apple cider for about 5 minutes until soft.
  2. Cream together 100 grams of softened unsalted butter and 150 grams of packed brown sugar until light and fluffy.
  3. Add 2 large eggs one at a time, mixing well after each addition, then stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together 200 grams of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the date and apple cider mixture, mixing until just combined.
  6. Preheat the oven to 180°C (350°F) and grease an 8×8 inch baking dish or ramekins.
  7. Pour the batter into the prepared dish and bake for 25-30 minutes, checking for doneness with a toothpick.
  8. While baking, prepare the apple cider glaze by combining 100 milliliters of apple cider, 100 grams of brown sugar, and 50 grams of unsalted butter in a saucepan, heating until smooth and simmering for 5 minutes.
  9. After baking, poke holes in the pudding and pour the warm glaze over it, allowing it to soak in.
  10. Let sit for a few minutes before serving, optionally with vanilla ice cream or whipped cream.

Notes

  • Overmixing can lead to a dense pudding; mix until just combined.
  • Use a kitchen scale for accurate measurements.
  • Let the date mixture cool slightly before adding to the batter.
  • Check for doneness with a toothpick.
  • Let the pudding sit before pouring the glaze for better absorption.
