Description

Apple Cider Gingerbread Blondies are a delightful twist on traditional blondies, combining warm gingerbread flavors with sweet apple cider for a soft, chewy dessert perfect for fall.

Ingredients

  • Unsalted butter: 1/2 cup (113 grams), melted
  • Brown sugar: 1 cup (packed, 220 grams)
  • Granulated sugar: 1/2 cup (100 grams)
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • All-purpose flour: 1 1/2 cups (190 grams)
  • Baking powder: 1 teaspoon
  • Ground ginger: 1 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/4 teaspoon
  • Salt: 1/4 teaspoon
  • Apple cider: 1/2 cup (120 milliliters)
  • Chopped apples: 1 cup (about 2 medium apples)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9-inch (23×23 cm) baking pan by greasing it or lining it with parchment paper.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground ginger, ground cinnamon, ground nutmeg, and salt.
  4. In another large mixing bowl, combine the melted unsalted butter, brown sugar, and granulated sugar. Whisk until well blended, then add the eggs one at a time, whisking after each addition. Stir in the vanilla extract and apple cider.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let the blondies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • For gluten-free blondies, replace all-purpose flour with a gluten-free flour blend.
  • For vegan blondies, substitute eggs with flaxseed meal or applesauce and use plant-based butter.
  • Store in an airtight container at room temperature for up to three days or refrigerate for up to a week.
  • Wrap individual blondies in plastic wrap and freeze for up to three months.
