Ingredients
- Unsalted butter: 1/2 cup (113 grams), melted
- Brown sugar: 1 cup (packed, 220 grams)
- Granulated sugar: 1/2 cup (100 grams)
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- All-purpose flour: 1 1/2 cups (190 grams)
- Baking powder: 1 teaspoon
- Ground ginger: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/4 teaspoon
- Salt: 1/4 teaspoon
- Apple cider: 1/2 cup (120 milliliters)
- Chopped apples: 1 cup (about 2 medium apples)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×9-inch (23×23 cm) baking pan by greasing it or lining it with parchment paper.
- In a separate bowl, whisk together the all-purpose flour, baking powder, ground ginger, ground cinnamon, ground nutmeg, and salt.
- In another large mixing bowl, combine the melted unsalted butter, brown sugar, and granulated sugar. Whisk until well blended, then add the eggs one at a time, whisking after each addition. Stir in the vanilla extract and apple cider.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the blondies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
Notes
- For gluten-free blondies, replace all-purpose flour with a gluten-free flour blend.
- For vegan blondies, substitute eggs with flaxseed meal or applesauce and use plant-based butter.
- Store in an airtight container at room temperature for up to three days or refrigerate for up to a week.
- Wrap individual blondies in plastic wrap and freeze for up to three months.
