  • 4 packages (8 ounces each) cream cheese, softened

  • ½ cup sour cream
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 3 medium-sized apples, peeled, cored, and sliced
  • ¼ cup granulated sugar (for apple topping)
  • 1 teaspoon ground cinnamon (for apple topping)
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter (for apple topping)

Instructions

  1. Preheat the oven to 325°F (163°C). Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
  2. Beat softened cream cheese with sugar until smooth. Add eggs, sour cream, vanilla extract, and cinnamon. Mix until smooth. Pour over the cooled crust.
  3. Bake for 50-60 minutes or until edges are set. Let cool in the oven for 1 hour before transferring to a wire rack. Refrigerate for at least 4 hours.
  4. For the topping, melt butter in a skillet. Add sliced apples, sugar, cinnamon, and lemon juice. Cook for 8-10 minutes until tender. Cool and spread over chilled cheesecake.
