Ingredients
- All-purpose flour: 2 cups (240 g)
- Brown sugar: 1 cup (200 g), packed
- Baking powder: 2 teaspoons
- Ground cinnamon: 1 teaspoon
- Salt: 1/2 teaspoon
- Eggs: 2 large
- Milk: 1/2 cup (120 ml)
- Unsalted butter: 1/2 cup (115 g), melted and slightly cooled
- Diced apples: 1 1/2 cups (about 2 medium apples)
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, ground cinnamon, and salt.
- In a separate bowl, beat the eggs, then whisk in the milk and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
- Fold in the diced apples until evenly distributed throughout the batter.
- Spoon or scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Use firm, slightly tart apples such as Granny Smith, Honeycrisp, or Fuji for best results.
- Do not overmix the batter to avoid dense muffins.
- Optional: add 1/2 cup chopped nuts (walnuts or pecans) or dried fruits (raisins or cranberries) for variation.
