Apple Cinnamon Streusel Coffee Cake is a delightful treat that combines sweet apples, aromatic cinnamon, and a crumbly streusel topping, perfect for breakfast, brunch, or as an afternoon snack.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Granulated sugar: 1 cup (200 grams)
  • Brown sugar: 1/2 cup (100 grams)
  • Baking powder: 2 teaspoons
  • Ground cinnamon: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted butter: 1/2 cup (115 grams), softened
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Milk: 1/2 cup (120 ml)
  • Diced apples: 2 cups (about 2 medium apples)
  • Chopped nuts: 1/2 cup (optional)

For the streusel topping:

  • All-purpose flour: 1/2 cup (60 grams)
  • Brown sugar: 1/4 cup (50 grams)
  • Ground cinnamon: 1 teaspoon
  • Unsalted butter: 1/4 cup (60 grams), melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, ground cinnamon, and salt.
  3. Cream the softened unsalted butter until light and fluffy, then add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  4. Gradually combine the butter mixture with the dry ingredients, alternating with the milk, mixing until just combined.
  5. For the streusel topping, combine the flour, brown sugar, and ground cinnamon in a small bowl, then mix in the melted butter until crumbly.
  6. Fold in the diced apples and any chopped nuts into the cake batter, then pour the batter into the prepared cake pan and sprinkle the streusel topping over it.
  7. Bake for 35-40 minutes, checking for doneness with a toothpick.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve warm or at room temperature.
