Delicious cookies combining rich chocolate and refreshing mint, perfect for any occasion.
Ingredients

- 1/2 cup unsalted butter (softened to room temperature)
- 1/2 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 1 large egg (at room temperature)
- 1 teaspoon pure vanilla extract
- 1 and 1/4 cups all-purpose flour (spooned and leveled)
- 1/2 cup natural unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 2 teaspoons milk (any kind, dairy or non-dairy)
- 1/2 cup granulated sugar (for coating)
- 22–24 Andes chocolate mints (unwrapped)
Instructions
- In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy.
- Add egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Slowly add dry ingredients to the wet ingredients while mixing on low speed.
- Increase mixer speed and add milk until combined, then chill dough for at least 2 hours.
- Preheat oven to 350°F (177°C) and prepare baking sheets.
- Roll dough into balls, coat in sugar, and place on baking sheets 2-3 inches apart.
- Bake for 10-12 minutes, then cool for 2 minutes before adding Andes mints on top.
Notes
For variations, consider using other chocolate candies or adding crushed mint candy to the dough.
