Delicious cookies combining rich chocolate and refreshing mint, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter (softened to room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg (at room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 and 1/4 cups all-purpose flour (spooned and leveled)
  • 1/2 cup natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons milk (any kind, dairy or non-dairy)
  • 1/2 cup granulated sugar (for coating)
  • 2224 Andes chocolate mints (unwrapped)

Instructions

  1. In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy.
  2. Add egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Slowly add dry ingredients to the wet ingredients while mixing on low speed.
  5. Increase mixer speed and add milk until combined, then chill dough for at least 2 hours.
  6. Preheat oven to 350°F (177°C) and prepare baking sheets.
  7. Roll dough into balls, coat in sugar, and place on baking sheets 2-3 inches apart.
  8. Bake for 10-12 minutes, then cool for 2 minutes before adding Andes mints on top.

Notes

For variations, consider using other chocolate candies or adding crushed mint candy to the dough.
