  • 100g granulated sugar
  • 35g cornstarch
  • 1 cup blueberries
  • 1 cup blackberries
  • 2 cups chopped strawberries
  • 2 cups halved dark sweet cherries
  • 2 teaspoons lemon juice
  • 1/2 teaspoon almond extract
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Optional: coarse sugar for sprinkling on crust

Instructions

  1. Prepare homemade pie crust according to recipe; chill for at least 1 hour.
  2. Mix granulated sugar and cornstarch. Combine blueberries and blackberries in one bowl; mix half the cornstarch mixture, lemon juice, and almond extract. In another bowl, combine strawberries and cherries with remaining cornstarch mixture, lemon juice, and almond extract. Chill both.
  3. Preheat oven to 400°F (204°C). Roll out one dough disc, place in a 9-inch pie dish.
  4. Fill larger section with strawberry-cherry mixture, smaller section with blueberry-blackberry mixture. Chill pie while preparing top crust.
  5. Roll out second dough disc; cut strips and star shapes to create flag design. Arrange on pie.
  6. Brush crust with egg wash (egg + milk); sprinkle coarse sugar if desired.
  7. Bake at 400°F for 20 minutes; reduce heat to 350°F (177°C) and bake 30-35 more minutes. Cover edges if browning too fast.
  8. Cool pie for at least 3 hours before serving.
