- 2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 medium ripe bananas, mashed
- 3 large eggs
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
- In a large bowl, combine the almond flour, baking powder, baking soda, salt, and cinnamon (if using). Whisk until well blended.
- In a separate bowl, mash the bananas and then add the eggs, honey or maple syrup, and vanilla extract. Whisk to combine.
- Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Do not overmix.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full. Optionally, top with sliced bananas or nuts.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
