Description

Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 medium ripe bananas, mashed
  • 3 large eggs
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, combine the almond flour, baking powder, baking soda, salt, and cinnamon (if using). Whisk until well blended.
  3. In a separate bowl, mash the bananas and then add the eggs, honey or maple syrup, and vanilla extract. Whisk to combine.
  4. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Do not overmix.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full. Optionally, top with sliced bananas or nuts.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
