  • 4 medium russet potatoes
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil
  • Additional shredded cheese for topping (optional)

Instructions

  1. Wash the russet potatoes thoroughly under cold water and pat them dry.
  2. Poke several holes in each potato with a fork.
  3. Preheat the air fryer to 400°F (200°C) and brush the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes in the air fryer basket and cook for 35-40 minutes, turning halfway through.
  5. Once cooked, let the potatoes cool, then cut them in half lengthwise and scoop out the insides into a mixing bowl.
  6. Add cream cheese, sour cream, 3/4 cup cheddar cheese, green onions, garlic powder, salt, and black pepper to the bowl and mix until smooth.
  7. Spoon the filling back into the potato skins, mounding it slightly on top.
  8. Return the stuffed potatoes to the air fryer and cook for an additional 5-10 minutes until the tops are golden brown and cheese is melted.
