- 4 medium russet potatoes
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 2 green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil
- Additional shredded cheese for topping (optional)
Instructions
- Wash the russet potatoes thoroughly under cold water and pat them dry.
- Poke several holes in each potato with a fork.
- Preheat the air fryer to 400°F (200°C) and brush the potatoes with olive oil and sprinkle with salt.
- Place the potatoes in the air fryer basket and cook for 35-40 minutes, turning halfway through.
- Once cooked, let the potatoes cool, then cut them in half lengthwise and scoop out the insides into a mixing bowl.
- Add cream cheese, sour cream, 3/4 cup cheddar cheese, green onions, garlic powder, salt, and black pepper to the bowl and mix until smooth.
- Spoon the filling back into the potato skins, mounding it slightly on top.
- Return the stuffed potatoes to the air fryer and cook for an additional 5-10 minutes until the tops are golden brown and cheese is melted.
