Description

A quick and delicious air fryer chicken and potatoes recipe that combines juicy chicken thighs with crispy baby potatoes, all cooked to perfection in an air fryer.


Ingredients

  • Chicken thighs: 4 pieces (bone-in, skin-on)
  • Baby potatoes: 500 grams (about 1 pound)
  • Olive oil: 3 tablespoons
  • Garlic powder: 1 teaspoon
  • Paprika: 1 teaspoon
  • Salt: 1 teaspoon (adjust to taste)
  • Black pepper: 1/2 teaspoon (adjust to taste)
  • Fresh rosemary: 2 sprigs (or 1 teaspoon dried rosemary)

Instructions

  1. Pat the chicken thighs dry with paper towels and place them in a large bowl.
  2. Add 2 tablespoons of olive oil, garlic powder, paprika, salt, and black pepper to the chicken and toss until well coated.
  3. Wash the baby potatoes thoroughly and cut larger ones in half. In a separate bowl, toss the potatoes with the remaining 1 tablespoon of olive oil, salt, and black pepper.
  4. Preheat the air fryer to 200°C (400°F) for about 5 minutes.
  5. Place the seasoned chicken thighs in the air fryer basket, skin side up, and surround them with the baby potatoes. Add fresh rosemary if using.
  6. Cook for 25-30 minutes, checking that the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown and crispy.
  7. Remove from the air fryer and let rest for a few minutes before serving.
